What it is, in plain terms
FSSAI is not optional for anyone in the food chain, and the category you fall into is decided by turnover, production capacity and the nature of your operation — not by preference. Applying for the wrong category wastes the application, and operating above your licensed category is a compliance problem in its own right.
The other thing worth planning for is renewal. Licences are issued for a fixed term and lapse if not renewed in time, which for a food business means an interruption you cannot afford.
